Method
Combine the gluten free plain white flour, cocoa powder, xanthan gum and baking powder together.• Cream sugar and margarine together. Beat in the eggs and then add the vanilla.
Gradually add in the flour mixture and cream together.
Stir in the chocolate chips.
Roughly mould the mix into small balls between 2 teaspoons or drop a small amount from a spoon. Mixture make approximately 35 cookies.
Place balls onto a greased baking tray.
Bake for 12-15 mins. Remove immediately from tray and all them to cool.
Variations
Omit the cocoa powder and ass and extra ¼ cup of flour, for plain chocolate chip cookies.
Omit the vanilla extract and replace with 2-3 tsp of grated orange zest for orange flavoured chocolate chip cookies.
