Method
In a bowl mix together the gluten free flour, baking powder, xanthan gum and fruit sugar (or unrefined caster sugar).
Mix in the egg yolk, milk, melted margarine and vanilla extract (or maple syrup).
In a separate bowl with an electric whisk/mixer beat the egg whites until stiff peaks are formed.
Gently fold the egg whites into the batter.
Pour ¼ of the mixture into a pre-heated electric waffle maker.
